Ingredients:
- Lamb shoulder
 - 1.5 onions
 - 3 carrots
 - 1 orange bell pepper
 - 3 cloves of garlic
 - 1 habanero
 - 2 tsp curry
 - 1 tsp red pepper
 - 2 cups beef broth
 - 1 can tomato paste
 - 1 can diced tomato
 - 4 potatoes
 - 1 tbsp ginger
 - 1 tbsp coconut aminos
 - 3-4 sprigs fresh thyme
 
Directions:
- Brown the lamb and set aside
 - Dice onions, carrots, bell pepper, habanero, and garlic
 - In a large stew pot on the stove, Sautee the garlic
 - Add onions, bell pepper, habanero and Sautee a bit more
 - Add tomato paste
 - Cook for couple minutes until fragrant
 - Add diced tomatoes, coconut aminos, beef broth, ginger, thyme, potatoes, and lamb shoulder
 - Bring entire pot to simmer
 - Cover
 - Cook until at 350 approximately 2.5-3 hours or until lamb is tender
 - Option to serve with rice
