African Stew

Makes 6 servings


  • Lamb shoulder
  • 1.5 onions
  • 3 carrots
  • 1 orange bell pepper
  • 3 cloves of garlic
  • 1 habanero
  • 2 tsp curry
  • 1 tsp red pepper
  • 2 cups beef broth
  • 1 can tomato paste
  • 1 can diced tomato
  • 4 potatoes
  • 1 tbsp ginger
  • 1 tbsp coconut aminos
  • 3-4 sprigs fresh thyme


  1. Brown the lamb and set aside
  2. Dice onions, carrots, bell pepper, habanero, and garlic
  3. In a large stew pot on the stove, Sautee the garlic
  4. Add onions, bell pepper, habanero and Sautee a bit more
  5. Add tomato paste
  6. Cook for couple minutes until fragrant
  7. Add diced tomatoes, coconut aminos, beef broth, ginger, thyme, potatoes, and lamb shoulder
  8. Bring entire pot to simmer
  9. Cover
  10. Cook until at 350 approximately 2.5-3 hours or until lamb is tender
  11. Option to serve with rice
  12. Heat up your favorite dinner rolls and enjoy!
